After more than thirteen years at the helm of La Trattoria del Marinaio, a Messina restaurant founded in 2013, chef Carlotta Andreacchio opens a new chapter in her story with Onde Lente — a creative research lab where the sea is told from a fresh perspective.
A Messina resident by adoption, born in 1988 with a Calabrian heart, Carlotta has spent years shaping a cuisine that speaks of identity — essential, deliberate, built on respect for the land, close listening to local fishermen, and a deep appreciation for locally caught seafood.

A workshop in the historic heart of Messina
Onde Lente opens its doors inside a seventeenth-century convent in the historic center of Messina, among the buildings that survived the 1908 earthquake. With just sixty covers, the space was designed for an intimate experience focused on gastronomic research.

The two pillars of this research are fish dry-aging and open-flame cooking, tools through which every part of the raw ingredient finds new life, guided by a deeply anti-waste philosophy. A cuisine born of memory, lived in the present, and looking toward the future.
