The sea, memory, research: Onde Lente is born.

Onde Lente is chef Carlotta Andreacchio's new project, born from the evolution of her professional journey after more than thirteen years at the helm of La Trattoria del Marinaio. A creative lab where memory, territory, and identity meet research, technique, and new modes of expression

The protagonist is Carlotta Andreacchio, a Messina chef by adoption who has built a cuisine of strong identity — essential and conscious — rooted in respect for the land and the celebration of locally caught seafood. Onde Lente brings together fish dry-aging, open-flame cooking, and an anti-waste philosophy, turning the sea into a contemporary culinary language.
